Chicken, Mushroom and Squash Burritos

Ingredients:
1 Tbl vegetable oil
1 yellow squash; sliced
10 small mushrooms; sliced
2 chicken breasts (whole) w/out bone or skin
 cut in 1/2 inch strips
1 cup black beans; cooked
1 tsp grenadine
1/4 cup orange juice
1/2 tsp chili powder
3 Tbl tequila; good quality
1/4 tsp garlic powder
1 cup chicken stock
2 Tbl cornstarch
1/2 cup cold water
1 tomato; diced
6 flour tortillas; warmed

Instructions:
1.) Heat oil in nonstick skillet on medium-high heat.
2.) Add squash and mushrooms, cooking until slightly soft; remove from skillet.
3.) Add chicken to skillet and cook 6-8 minutes.
4.) Return squash and mushrooms to pan; add black beans, grenadine, orange juice, chili powder, tequila, garlic powder, and chicken stock.
5.) Lower heat to medium and cook for 5 minutes.
6.) In separate bowl, combine cornstarch and water until smooth; add to skillet mixture and stir until thickened.
7.) Add tomato and heat through.
8.) Portion mixture evenly among tortillas and fold classic style. Serve immediately.

Colors of Mexico Salsa

Ingredients:
1 1/2 lbs tomatoes, diced
1 large white onion, chopped
1 bunch green onions, chopped
2 teeth fresh garlic, chopped fine
1 large Anahiem chili, chopped
2 Jalapeño chilis (or more if you like it hotter), chopped
1/4 cup cilantro, chopped
1 tablespoon red wine vinegar
1 tablespoon lemon juice
Ground Cumin to taste
Salt to taste

Instructions:
1.) Mix all ingredients in large bowl.
2.) Adjust taste to your liking.

Northern New Mexico Red Chile Sauce

Boil: 1 quart of water with 3 Tbl fat

Combine:
1 tsp salt
2 Tbl flour
8 Tbl ground red chile (preferably from the sacred area of Chimayo, NM)

Instructions:
1.) Add enough water to make a paste.
2.) Stir paste slowly into boiling water.
3.) Stir until thick.

Emily's Chimichanga

Ingredients:
Flour tortilla
Grated cheddar cheese
Ground beef
Guacumole
Salsa
Sour cream
Spices to taste
[Ed. note: All amounts were unspecified. Presumably, just enough to fill a tortilla, or just enough to split your sides!]

Instructions:
1.) Put ingredients on center of flour tortilla
2.) Roll ingredients into tortilla.
3.) Fry 1 min each side in oil.

Weenies & Huevos

Ingredients:
One weenie per two eggs
Tortillas
Ketchup
Salsa
Cheese
[Ed. note: Ketchup may be hazardous to your taste buds. Use caution.]

Instructions:
1.) Cut up wienie into little circles.
2.) Fry over medium heat until just burnt.
3.) Crack open eggs and scramble until eggs are done.
4.) Spoon onto hot flour tortilla.
5.) Add salsa, ketchup, cheese, whatever.
6.) Eat.
